If the sugar content is below or above the ideal Brix level, your mixture may not freeze properly. You can use a refractometer to test the Brix level, this will help ensure proper freezing. Yes, when your establishment is closed, put your machine in standby mode. Doing this will allow you to save a considerable amount of electricity and will preserve your slushy.

If ice crystals appear on your slushy machine, put your machine in defrost mode. This will allow you to defrost the product quickly. Wait until Defrost finishes before use (During Defrost, Slush and Stand By mode of any tank is deactivated). Please reference your unit’s manual for more information.
